If you love to snack on hummus, here’s how to make lectin free hummus – so you don’t have to give up everyone’s favorite dip. The secret? Soaked macadamia nuts instead of beans for a protein rich bean-free hummus.
2 cups macadamia nuts, pine nuts, or a mix, soaked in water for at least 10 hours
3 cloves garlic
Juice of 1 lemon
¼ cup olive oil
2 Tbsp tahini
Salt and pepper, to taste
Parsley and paprika, to garnish
Celery or jicama sticks, to serve.
Strain nuts and place in a food processor fitted with an “s” blade, along with garlic, lemon, olive oil, and tahini.
Process until smooth, then taste and adjust seasoning
Serve with chopped veggies, garnished in paprika, parsley, and a drizzle of olive oil.
