These addictive chocolate chip cookies feature a sprinkle of salt to really push them over the top. They’re easy to make, healthy, and completely delicious – people won’t even know how healthy they are.
Dr. G’s Salty Chocolate Chip Cookies
1 ¼ cups blanched almond flour
½ cup coconut flour
½ tsp sea salt + more for sprinkling
½ tsp baking soda
½ tsp xanthan gum
⅔ cup grass-fed butter or coconut oil
¾ cup swerve
1 ½ tsp vanilla extract
½ cup chopped bittersweet chocolate
½ cup shelled pistachios
Preheat oven to 350. Line a sheet tray with parchment. Set aside.
In a small bowl, whisk together the dry ingredients, and set aside.
In a mixer, or in a bowl with a hand mixer, whip together the butter and swerve until fluffy, about 2 minutes.
Add egg and vanilla continue to combine, for another minute.
Add chocolate and pistachios and fold to combine.
Roll dough into 12 balls, and flatten slightly on a baking sheet. Sprinkle with salt and bake 12-18 minutes before serving.
