The Best-Tasting, Most Nutritious Hummus I’ve Ever Had..& It Just Takes 5 Minutes!
Chickpeas, also known as garbanzo beans, originated in the Middle East and have made their way around the world. They are currently the most widely consumed legume. The nutritional properties of each colored variety are very similar, but the antioxidants change with the colors.
Chickpeas are popular for so many reasons. They taste great, and they are an excellent balance of protein, carbohydrates, and fiber with low amounts of fat. A single serving of chickpeas contains ten grams of protein (20 percent of the RDI) with only four grams of fat, mostly polyunsaturated. The protein-to-fat ratio is perfect for building muscle mass and losing extra weight. Chickpeas have a whopping 17 grams (which is 68 percent of the RDI).
Anyways, though I’ve never personally been a huge chickpea fan and they’ve never agreed with my gut too much, I recently found a way to eat sprouted chickpeas, inspired by my recent fascinating podcast episode with sprouting expert Doug Evans, in the form of what is, I think, just about the best-tasting and easily-digesting hummus I’ve ever tasted in my life…
…so here’s the recipe!
Doug Evans’s Sprouted Chickpea Hummus (makes about 3 cups)
In a high-speed blender, combine the chickpea sprouts, pickle and brine (and if you want, for added taste/complexity, you can throw in lemon juice, garlic, cumin, salt, and pepper) and blend, starting on low speed and working your way up to high, until silky smooth, 3 to 4 minutes, scraping down the sides as needed and adding water if the mixture is too thick. If the blender starts to get hot, stop to cool it for a couple of minutes.
The hummus will keep, covered tightly, for up to 5 days in the refrigerator. Try this easy recipe out and you’ll be blown away. Great with some rice crackers, jicama, cucumbers or carrots for dipping.
